Thierry's striking traditional French wedding cakes (Piéce Montée or Croquembouche) are edible ensembles that never fail to impress. With care and skill, small kirsch and mousse- or custard-filled choux pastry are
joined one to the other by caramel to form a graceful, tapering tower. |
“We thoroughly enjoyed our night and our cake was
definitely a great talking point all evening!! The cake was a fabulous addition
to our dessert and was enjoyed by everyone…”
“Thank you so very much for creating such a
spectacular masterpiece of a cake for us. It was a real showpiece and received
many comments. It was delicious too!”

Our French wedding cakes are special because the pastry is not stuck to a hidden cone beneath. In France, such supports are unacceptable, says Thierry. This is because an unsightly picture is created as the prop becomes progressively exposed, when the cake is being cut in front of the guests for serving. |
